There’s nothing I love more than a delicious sandwich packed full of crunchy vegetables. This veggie sandwich is the ultimate because it’s full of all my favorite veggies to put in a sandwich and it really does hit the spot.
The weather around here has been pretty unbearable the last few weeks with temperatures over 100 degrees. When it’s that hot cooking isn’t my favorite thing to do because even using the stove seems to heat up the house too much. A sandwich full of cold and crunchy veggies seems to hit the spot every time.
This is a completely meat-free sandwich but you can easily add in a layer of deli meat if you want to make this a deli and veggie sandwich. I made this for lunch over the weekend and my sandwich was all veggies and Jesse’s had a layer of deli turkey.
Instead of using mayo and/or mustard for the sandwich, I decided to use a fancy cream cheese spread. Chop up chives and green onion and then add it in a bowl with softened cream cheese. Sprinkle in a little garlic powder and onion powder and then mush it all together. If it’s too thick, a little mayo can be added to help soften it up.
Toast 2 slices of bread and then spread the cream cheese spread over the slices.
First, layer on some cheese. Any cheese you have or like will work, I just happened to have some slices of Swiss and Havarti cheese in my fridge so that’s what I used.
Layer on slices of avocado and tomato. It’s already starting to look delicious!
Grab a cucumber and slice it up super thin and then add a good amount on the sandwich. I don’t know why, but I love thinly sliced cucumbers on my sandwiches. They’re just so refreshing!
The next layer is alfalfa sprouts. I love alfalfa sprouts, I think they’re the perfect thing to add onto a veggie sandwich. These can be omitted but I think they add the perfect crunch and flavor.
Then the final ingredient is a few leafs of lettuce, or a small handful of spinach.
Top off the sandwich with the second slice of bread.
Slice it in half and enjoy! It’s super refreshing and hits the spot on these hot summer days and is hearty enough to hold you over until the next meal.
- 2 slices of Bread
- 2 slices Swiss Cheese
- 1/4 Avocado, sliced
- 1/2 Tomato, sliced
- 1/4 small Cucumber, thinly sliced
- 1/4 cup Alfalfa Sprouts
- 2 leaves of Lettuce
- Onion & Chive Spread
- 3oz. Cream Cheese, softened
- 1 T Chives, finely diced
- 1 T Green Onion, finely diced
- Dash of Garlic Powder
- Dash of Onion Powder
- Make cream cheese spread first. Add the ingredients to a small bowl and mix until combined.
- Toast two pieces of bread, optional, then spread with cream cheese spread.
- Layer the remaining sandwich ingredients then top with second slice of bread.
- Cut in half and enjoy.
