July has clearly been a busy month for me since this is the first post I’ve made this month. I was gone for the first 5 days of July and then got busy with work and a work event I was helping with, so now things are finally settling down and I can get back to posting more food blogs!
We’re definitely in the middle of summer now with this non-stop heat wave and what better way to beat the heat than with popsicles! I love popsicles but they’re so full of sugar and ingredients that I can’t pronounce, so I decided to make my own – I think I’m hooked! I can make any flavor combination and make them as healthy (or as unhealthy) as I want.
Popsicles always remind me of family vacations in Phoenix. At home the only popsicles we would buy were the Otter Pops or fudgesicles, but when we went on vacation to Phoenix we always got the “fun” popsicles. Now I get to make my own fun popsicles at home and this strawberry lemonade version is every bit refreshing as it is delicious!
I don’t have popsicle molds so I decided to use little cups and popsicle sticks that way everything is disposable and and I didn’t have to go out and buy popsicle molds. Plus, this size is a perfect cute little popsicle size.
Start by dicing up several strawberries into small pieces and then divide them between each cup.
Next, make lemonade that can be added to each cup. I used Crystal Light lemonade but you can use whatever kind you have on hand or even make freshly squeezed. The lemonade needs to be on the stronger side because the flavor will weaken when it freezes.
Fill up each cup about 2/3 of the way with lemonade. The strawberries may float a little but that’s okay.
Stick the cups into the freezer and let them freeze for about 30-45 minutes, then stick in the popsicle sticks. If you try and add the sticks before they’re firmed up, the sticks will fall to the side and won’t stand up straight. I like to get the strawberries firm and the lemonade icy and then the sticks will stay put.
Let the popsicles freeze for several hours and then they’re ready to eat!
The cup only needs to be ripped off and it comes off the popsicle very easily!
The first few licks of the popsicle are going to be super tart because of the lemonade, but once you get passed that first thin layer, it sweetens up and is delicious.
These are a fun and easy treat for kids to make and are much better for you than most popsicles out there.
- 6-7 Medium Strawberries
- 2-3 cups Lemonade, strong flavored
- 6 Popsicle Sticks
- 6-5oz cups
- Remove the green from the strawberries and dice into small pieces. Divide the diced strawberries among the 5oz cups.
- Fill each cup with lemonade to about 2/3 full.
- Stick the cups into the freezer until the strawberries get firm and can hold the popsicle sticks straight up, then put in the popsicle sticks and let freeze until totally frozen, 2-3 hours
- Peel off the cup wrapper and enjoy!
