It’s that time of year again, when the whole world goes crazy for PUMPKIN everything.. or maybe it’s just the U.S. female world!? Either way the pumpkin craze is beginning to pop up all over: pumpkin lattes, pumpkin soup, pumpkin desserts, pumpkin candles, etc, etc. I actually think the Pumpkin Spice Latte from Starbucks is one of the grossest coffee drinks ever invented.. but that’s just my opinion.
I didn’t grow up eating pumpkin, I don’t ever remember a Thanksgiving where we served pumpkin pie. In fact, I don’t recall ever having pumpkin anything until I was much older when pumpkin started becoming a fad. The only pumpkin related item I’ve eaten much of are roasted pumpkin seeds, which I can assure you will make an appearance on my blog within the next two months!
It wasn’t until college that I actually began to tolerate a few pumpkin items, one of which are these Pumpkin Spice muffins that my college roommate shared with me. I think my friend Sarah made these for one of our roommates birthdays, and then it just became tradition to make them whenever there was a birthday. Or just any other time we could get our hands on a can of pumpkin!
I realized today while I was making these muffins that I only ever make them during the fall/winter seasons, but think I’m going to start making them year around, I mean, why not? They’re so dang good!
This isn’t really much of a recipe, and by that I mean it really isn’t a recipe at all; it just so happens to be the easiest pumpkin muffins ever because it consists of 3 ingredients.
1 can Pumpkin
1 box Spice Cake mix
1 cup semi-sweet chocolate chips, or dark chocolate
Empty the box of cake mix into a bowl and then add in the whole can of pumpkin.
Then mix it up real good with a hand or stand mixer. I actually used to mix these with a wooden spoon or a spatula and it would take me forever and a hand cramp to get the two ingredients combined. I don’t know why it took me so long to realize a hand mixer would be so much easier – and it was!
Then mix in the cup of chocolate chips
Scoop the mixture into muffin pans, I was able to make 18 regular sized muffins with this recipe. It’s a really soft and sticky “dough” so the muffins aren’t going to be pretty and smooth on the tops.
Stick them in a pre-heated 350 degree oven for about 15 minutes (depending on your oven) and remove them when a toothpick comes out clean.
Let the muffins cool a few minutes, then dig in! They’re too yummy to only have one, so save room for two! These also work great as jumbo muffins or as mini muffins. I’ve even seen people use this same recipe to make cookies for their kids, they’ll definitely be more cake like and fluffy, but the kids will never know they aren’t real cookies!

- 1 can Pumpkin Puree
- 1 box Spice cake mix
- 1 cup chocolate chips, optional
- Preheat oven to 350 degrees
- Mix the pumpkin and spice cake until totally combined
- Mix in the chocolate chips
- Scoop into a muffin pan and bake for 15 minutes, or until toothpick inserted comes out clean
