Dinner time is a little crazy around here these days, sometimes it gets done on time, most times it doesn’t. I’ve been trying out more meal ideas that can be prepped ahead of time while the little one is sleeping, then can be thrown together for dinner. I randomly threw together this marinade the other day and I’ve been obsessed with it ever since and I’ve now made it several times a week the last several weeks. It’s super easy to throw together a few hours before dinner, or whenever the baby is napping, and then it just takes a few minutes to cook for dinner.
I love this recipe because it’s so basic, there aren’t any fancy ingredients and I almost always have these ingredients on hand. Plus, I’m all about the easier it is the better it is!
The main ingredient in this marinade is lime juice and because of that it can’t marinade for more than 3 hours because the lime will actually cook the chicken if left for too long. If the chicken is chewy instead of super moist, then you know it sat in the marinade for too long.
Grab a large zip-top bag and mix the marinade first before adding the chicken.
Add in the oil and all the seasonings.
Zest a lime and add in the zest and then the juice.
Chop up a bunch of cilantro and add that in as well.
Mix the ingredients so they’re totally combined, then add in the chicken.
Let the chicken set in the fridge for at least an hour and no longer than three hours, then cook! My favorite way to eat this chicken is barbecued. This is actually the perfect chicken to make for a week of meal prep; the chicken stays super moist and flavorful in the fridge and is perfect in tacos, on salad or next to a side of veggies.
For this recipe I just cooked it right on the stove top, because sometimes it’s 100 degrees outside and no one wants to stand next to a hot grill. The chicken has so much flavor and that lime definitely shines through! If you’re looking for a new chicken recipe that’s yummy and flavorful and easy, I’m telling you, this is the one!

- 4 Chicken Breast, thawed
- 1/2 cup Canola Oil
- 2 tea. Garlic Powder
- 2 tea. Onion Powder
- 2 tea. Chili Powder
- Zest 1 Lime
- Juice 1 Lime
- 2 Tablespoons Cilantro, minced
- Add all ingredients, except chicken, to large zip-top bag, mix up.
- Add chicken to bag and completely coat.
- Let marinate for 1-3 hours then grill until cooked through, about 4-5 min each side
- Chop up or slice into strips, use on fajitas, tacos, salad, etc or use to meal prep for the week.
