Earlier this week I posted a recipe for tomato soup, and what pairs better with tomato soup than a grilled cheese sandwich? So naturally, my next post had to be a recipe for grilled cheese. But this isn’t just any ol’ grilled cheese, this is a French Onion Grilled Cheese, based off of french onion soup.
The only thing this sandwich doesn’t have is the beef broth flavor, but it has all the caramelized onion and Gruyere cheese flavors that you love in the famous soup. This recipe really isn’t any recipe at all, just a fun update on a classic sandwich.
First, start by caramelizing an onion. I love caramelized onions and have a little blog post on how to do it: here.
Grab the Gruyere cheese and make thick slices – I love Gruyere cheese because it melts beautifully and it has a little bit of a nutty, yet creamy taste. I actually ended up using a blended cheese I found at Trader Joe’s that was half Gruyere cheese and half white cheddar. It seemed to be a little softer than mild Gruyere and easier to slice, with a little less of a strong flavor.
Butter up some sandwich bread, I didn’t get fancy with this, or any other bread you have on hand to use.
Heat up a skillet and lay one slice of bread on it, buttered side down, and put a few slices of cheese on the bread to cover the surface. Get a big scoop of caramelized onion and lay those on top of the cheese, and then cover it with the second slice of bread, buttered side up. For some reason, when I made the sandwich I didn’t do it this way and I assembled the sandwich on a plate then moved it to the skillet – don’t do it that way, it caused more of a mess.
Once the bottom slice is nicely golden brown, flip it to cook the other side and press with a spatula to help spread the melted cheese through the onions.
This french onion grilled cheese is delicious and a fun twist on the classic. The cheese is creamy and delectable and the onions add a savory sweet note to the sandwich.
- 8 slices bread
- Butter, enough to coat one side of each slice
- 1 large onion, caramelized
- 1/2lb Gruyere Cheese, sliced
- Spread the butter on the bread, placing 4 slices, buttered side down, on a skillet
- Lay slices of cheese over the bread, then a layer of onion
- Top of with buttered bread and cook until golden brown on both sides and cheese is melted.
