I tried goat cheese for the very first time several years ago while at the Boise Farmer’s Market one sunny Saturday morning. Browsing through the farmer’s market was one of my most favorite things to do while we were living in Idaho. The weather was always fantastic and the booths were always so fun to see; lots of fresh produce, gorgeous bouquets of flowers and all different sorts of crafts for sale. But back to the cheese thing. It was fresh cheese from a local farm and they were offering free testing samples. I don’t remember exactly what it tasted like, but I knew that I wasn’t ever going to try goat cheese again.
That is until this last weekend when my friend came over and we made dinner together!
We’re both big fans of Shauna Niequist and wanted to try out a few of her recipes from her book “Bread & Wine”. The majority of her recipes contain goat cheese which has kept me from trying them, although to be perfectly honest I’m not sure why I didn’t just substitute the cheese for feta or just omit it altogether?!
Either way, we made Goat Cheese Biscuits and Green Well Salad and both contained plenty of goat cheese and both were extremely delicious! I am now totally hooked. I’ve been using it in salads and in my scrambled eggs in the morning and each way I incorporate it brings out so much flavor. Jesse even likes it too which is a bonus!
So here’s to trying more of Shauna’s recipes!
