Corn on the cob has been on my mind lately and I can’t seem to get enough of it. And since it is Cinco de Mayo today I thought I would up the corn on the cob game and make something a little more festive and delicious. And I made this: corn on the cob with a lime cilantro butter! My new favorite version of corn on the cob – I can guarantee I will be making this as often as possible this summer.
The corn is crisp and sweet, and the lime and cilantro is one of my favorite flavor combinations, and then topped off with the cotija cheese is just the icing on the cake! Cotija cheese definitely has a strong flavor but blends very well with the lime and cilantro – a match made in heaven!
Lime Cilantro Butter
Start by setting out a stick of butter to soften to room temperature. You definitely don’t want the butter melted, just soft so you can mix it.
Zest a whole lime and then squeeze about half the juice into the butter.
Grab a good bunch of cilantro and mince it up and add that to the butter.
Take a rubber spatula and mush the zest, lime juice and cilantro into the butter until fully incorporated. Let this set in the fridge for at least 30 min to firm up before using.
Assembling the Corn
I’m not a huge fan of grilling corn, and that’s probably mostly because we don’t own a grill to do that on. So you can grill your corn if that’s what you prefer but I like to boil my corn in a large pot of water for about 7-10 minutes (depending on how large your corn is), or just until the kernals are crisp but easy to pierce.
Take the corn out of the water and while it’s still hot, spread some of the cilantro lime butter over the corn and let it melt.
Then to top it off, sprinkle cotija cheese over the corn. DELICIOUS.
Corn on the cob is delicious on it’s own with butter and salt, but THIS, this makes me want corn on the cob with lime cilantro butter every night of the week! It’s an easy side dish to whip up and is perfect for having friends over for a summer time BBQ.
- 4 Corn on the Cob, cooked to your liking
- 1/2 stick Butter, room temperature
- 1 Lime, zest and juice
- 1/4 cup Cilantro, minced
- 1/4 cup Cotija Cheese
- Combine butter, lime zest, lime juice and cilantro and mix to combine. Let firm up in fridge.
- Spread butter on corn while hot and then sprinkle with cotija cheese.
