Summer is here and with it comes fresh produce! When I think of sunshine and summertime I think of crisp and colorful salads. One of my favorites to make is the Cobb salad… it’s fresh, it’s flavorful and it’s a deliciously simple salad to make and is hearty enough to even please the anti-salad people out there. Typically a cobb salad has diced chicken or ham on it, but since I didn’t have those available I used plenty of bacon and hard-boiled egg to make up the protein portion… and you can even omit the bacon for a vegetarian version.
It took me only about 15 minutes to throw this salad together which was perfect for our busy evening. I had already made and cooled the hard-boiled eggs earlier in the week so the main thing that had to be done was cooking the bacon extra crispy.
Here’s what you need:
Lettuce, cucumber, avocado, bacon, hard-boiled eggs, tomatoes, cheese and a dressing of your choice.
Chop the lettuce and lay it on a platter, or pile it into a bowl.
Chop the rest of the ingredients into bite sized pieces and lay across the lettuce.
Dice up a few hard boiled eggs and an avocado and add those to your salad.
Chop up a few tomatoes, part of a cucumber and crumble some extra crispy bacon on top.
I was going to shred pepper jack cheese to top the salad off, but ended up choosing fresh goat cheese to crumble on top. The goat cheese complemented the salad very well!
The salad looks so delicious! I love all the different layers and textures that come with this salad.
Finish off the salad with a little homemade vinaigrette. I decided to make a homemade version because I didn’t have one on hand and because a red wine vinaigrette is super easy to make! All you need is olive oil/canola oil, red wine vinegar, a little sugar, and a pinch of salt and pepper.
Toss the salad with the dressing and enjoy!
- Romaine Lettuce
- 1 Avocado, diced
- 1-2 Hard Boiled Eggs, diced
- 3 tomatoes, diced
- 4 slices of extra crispy bacon, crumbled
- 1/4 cucumber, diced
- Goat Cheese, crumbled
- Dice all ingredients and arrange in a bowl or on a platter - serve with dressing and enjoy!
