Sometimes chicken is the most monotonous meat to cook, it gets boring and simple real fast. We eat chicken a lot in our house but every now and again it’s time to switch it up with the flavors. A few weeks ago I decided to make up a quick marinade for chicken and it was delicious!
Here’s what you need:
Lemon and orange zest, fresh ground black pepper, fresh rosemary, fresh garlic, and either infused oil or regular canola oil and of course, chicken.
Zest up a little lemon and orange, about a total of 2 tablespoons. If there’s too much citrus it will literally cook the chicken from the inside out while marinating. Also, a little zest goes a long way flavor wise.
Chop up some fresh rosemary. Be sure to remove the middle stalk before chopping. This is a potent herb, so you only need 1 tablespoon chopped.
I had some basil oil and lemon olive oil so I used about 2 tablespoons of each, but it’s not necessary for this dish. Plain ol’ olive oil or canola oil (or whatever oil you like, I’m sure coconut oil would fit nicely with the citrus) will work just as well.
When the chicken is thawed, place it into a large ziploc bag and add in the oil.
Dump in the rest of the ingredients adding salt and fresh ground black pepper, and mince the garlic cloves.
Seal the bag and toss it around to get all of the chicken coated. This just sets in the refrigerator for about two hours.
Cook the chicken over medium heat in a large skillet until no pink is left.
And wa-la, A delicious chicken dish is served! This is such a simple marinade and makes the chicken so moist and flavorful, you can’t go wrong with this recipe. Add other fresh herbs or different citrus zest to mix up the flavor.
Serve with my Green Beans and Almonds for a complete dinner.
- 2 Chicken Breast, thawed
- 4 T oil
- 1 T fresh Rosemary, chopped
- 2 T citrus zest, lemon and orange
- 1 Garlic clove, minced
- Fresh ground pepper
- Thaw chicken and place into large ziploc bag.
- Add in oil, herbs, citrus zest, garlic, pepper, and salt.
- Set in fridge for two hours, then cook over medium heat until no pink shows
