I was scrolling through some of my older blog posts and realized it’s been a full 5 months since I last posted a cookie recipe. I didn’t realize it had been so long so of course I had to post a new recipe and it’s a delicious one! These cookies aren’t your typical chocolate chip cookies, the base is oatmeal instead of flour and they’re soft and chewy, just the way I like them.
I saw these cookies on The Pioneer Woman’s show on Food Network and decided to make them because they sounded so yummy but also a little unique. I switched things up a little with this recipe to make it my own.
Gather the ingredients and let’s get started…one thing I love about this recipe is that there aren’t an abundance of ingredients to use and they’re all basic pantry staples.
Blend together the softened butter with the brown sugar until it’s light and fluffy, this takes a minute or two of mixing and it really does make a huge difference in the final product.
Add in a couple eggs with some vanilla and mix to blend.
Add in the flour, baking soda and salt, then mix until combined. I’m all about cookie recipes where I can throw everything into the mixing bowl and mix together, rather than having three separate bowls and combining at the end.
Add in a bunch of oats and then mix again until totally combined. I made the first dozen cookies like this, but the second dozen I added in chocolate chips, and I definitely prefer the chocolate chip option.
Use a cookie dough scoop to scoop out the dough onto a lined baking sheet then bake for about 10 minutes.
The key to really good homemade cookies is how you bake them. If the recipe says bake for 12 minutes, set a timer for 10 and see how they look. You want the cookies to look like they still have a minute or two left to bake when you pull them out. Let the cookies set on the baking sheet for another 2-3 minutes before moving them to a cooling rack. Letting them set on the hot baking sheet allows them to continue cooking for another minute but doesn’t overcook them.
The cookies will flatten and spread out and the bottoms will get slightly crispy.
These cookies are so delicious and a great mix up of the regular chocolate chip cookies. They’re so soft and chewy and all the brown sugar gives them such a great rich flavor.
I’m glad I added chocolate chips because I definitely preferred the cookies with the chocolate. If you give me options that include chocolate or no chocolate, almost 99% of the time I will choose the chocolate option.
- 1 cup softened Butter
- 2 cups Light Brown Sugar
- 2 Eggs
- 2 teaspoons Vanilla
- 1-1/2 cups Flour
- 1 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 3 cups Old Fashioned Oats
- 1 cup Chocolate Chips
- Preheat oven to 350*F
- Add the butter and brown sugar to a mixing bowl and mix for 1-2 minutes or until light and fluffy. Add in the eggs and vanilla and mix to combine.
- Add in flour, salt and baking soda to the mix and mix until just combined, make sure to scrape the sides to get everything together.
- Add in the oats and mix again until just combined and then add in the chocolate chips and fold those in with a rubber spatula.
- Use a cookie scoop or 2 TB measure and place the cookie dough onto a cookie sheet lined with parchment paper or a baking mat.
- Bake for 10-12 minutes or until bottoms are slightly crispy and the tops look like they need just another minute to finish baking.
