I’ve been growing 3 tomato plants this summer and they are massive; I’ve never seen tomato plants this large and they’re producing fruit (or are they vegetables??) like crazy. I’m constantly trying to keep up with them and use them in new ways. When Jesse was working late the other night, I was rummaging through the fridge looking for something to make for dinner, and I realized I had lots of tomatoes plus all the ingredients for a BLT with avocado. YUM! I love BLTA’s because they have all my favorite things: tomatoes, avocados and bacon… I could take or leave the lettuce.
BLT’s are great because they’re so quick and easy to throw together for a fast weeknight dinner, or they make the perfect lunch for a warm day. The added avocado in this BLTA version is the icing on the cake. This is even an easy meal to change up depending on your diet, you can substitute turkey bacon for real bacon, or you could even omit bacon altogether and use a sliced hard boiled egg for protein. I realize that doesn’t quite make it a BLT if you omit the bacon, but still a delicious dish nonetheless.
Start by frying up the bacon, I usually like 2-3 pieces per person. I cut the bacon in half before I put it in the pan to fry to make it a little easier to fry up and to use on the sandwich. I like extra crispy bacon, but however you normally like it will work just fine.
While the bacon is frying, cut up the rest of the ingredients.
Slice the tomatoes and avocado to be equal thickness.
I always like to make a garlic mayo to spread on the bread for this sandwich. Mix together a small amount of mayo with a little bit of granulated garlic and you’ve got garlic mayo!
I always like my sandwich bread to be toasted, so I stuck it in the toaster and then smeared on a little of that garlic mayo and then assembled. If you’re trying to go carb free, you can definitely use lettuce leaves instead of bread.
I like to start with tomatoes, avocado, bacon and then lettuce. Whenever I make a BLTA I almost never make it a closed sandwich, always an open faced sandwich with just one slice of bread. The big leaf of lettuce acts as a second piece of bread to help hold it all together.
I love all the layers of this sandwich!
This sandwich is so wonderful. The bacon is crispy, the flavors are fresh and it’s filling without being a heavy meal.
- 4-6 Slices of Bacon
- 1 large Tomato
- 1/2 large Avocado
- 2 large leafs of Lettuce
- 2 slices of Bread
- 1/4 cup Mayo
- 1 tsp. Garlic Powder
- Fry up the bacon until crispy.
- Slice the tomato and avocado into equal thickness slices
- Mix the mayo and garlic
- Toast the bread then spread the garlic mayo over the slices
- Layer the ingredients, tomato, avocado, bacon and then top with a leaf of lettuce.
