Have you ever had bruschetta? I LOVE IT. It’s such a simple appetizer or snack, and it’s so easy to make.
There are so many different ways to make this and there’s not really a recipe to follow, but here’s my version.
- red cherry tomatoes
- yellow cherry tomatoes
- balsamic vinegar
- crusty loaf of bread
- mozzarella cheese (optional)
I definitely prefer bruschetta when I have two different types of tomatoes, but if you only have a roma or red tomato than that’s just fine.
If you’re using cherry tomatoes just chop them in half – if you’re using roma tomatoes then just dice them up to whatever size you like!
Roll up your basil then chop it up and add it to the tomatoes.
Sprinkle the tomatoes with a little salt (and pepper if you like) then dash in a little balsamic vinegar. You can add as much vinegar as you want but definitely start out with less – I prefer a little less than I think most do.
Slice up your bread and spread a little butter to help crisp it up. Put it on a baking sheet and broil it for just a few minutes. Make sure you watch this but you want your bread to crisp up without getting too dark.
When it’s done, put the bread on a platter or plate and scoop on some of the tomato mixture.
If you’re using mozzarella cheese make sure you get the mozzarella balls or un-shredded cheese. Chop them up to be about half the size as the tomatoes and then use just a little
you can buy the shredded cheese and put it on the bread before you broil it so it’s melted on the bread when you add the tomato mixture!!!
I personally prefer no cheese – but Jesse liked the idea of cheese so I thought I would add that just in case anyone liked the cheese option as well!
Now eat up… It’s making my mouth water just thinking about it!!
